Don’t let your leftover soy sauce chicken go to waste! Give it a new life by transforming it into a flavorful chicken fried rice. This recipe offers a simple yet satisfying way to utilize leftover chicken, creating a delicious meal.
Main Ingredients- 1 piece of leftover soy sauce chicken
- 1 handful of sliced green onions
- 1 handful of shredded seaweed (gim/nori)
Cooking Instructions
Step 1
Lightly oil a pan and add the sliced green onions. Turn the heat to medium-low and sauté until the green onions are fragrant and lightly browned, creating an aromatic green onion oil.
Step 2
Shred or cut the leftover soy sauce chicken into bite-sized pieces. It’s best to remove excess crispy coating or skin if it seems too greasy, as it can make the fried rice heavy. Once the green onion oil is fragrant, add the shredded chicken to the pan and stir-fry together to infuse the chicken’s flavor.
Step 3
Push the sautéed ingredients to one side of the pan. Add a bowl of warm cooked rice to the empty side. Gently stir-fry the rice to separate the grains.
Step 4
Before mixing everything together, pour 1 tablespoon of soy sauce into the empty space at the bottom of the pan and let it sizzle for a moment. This caramelizes the soy sauce, adding a deeper, richer flavor to the fried rice. Then, mix all ingredients thoroughly and continue to stir-fry.
Step 5
For the finishing touch, sprinkle a generous amount of shredded seaweed (gim/nori) over the fried rice. The umami from the seaweed complements the chicken and rice beautifully.
Step 6
Finally, drizzle a little sesame oil for an added nutty aroma. If your leftover chicken was already quite oily, feel free to skip the sesame oil. Gently toss everything together to combine. Your delicious chicken fried rice is now ready to be enjoyed!
