Main Ingredients

  • 400g Kalra Cherry Tomatoes (choose firm, fresh ones)
  • 10g Fresh Basil Leaves (about 1 handful)
  • 1/2 Lemon (fresh is best)

Marinade Sauce

  • 200ml Plum Syrup (Maesilcheong – store-bought or homemade)
  • 150ml Water
  • 50ml Olive Oil (extra virgin recommended for flavor)
  • 4 Tbsp Fresh Lemon Juice (from about 1/4 lemon)

Cooking Instructions

Using a knife, make a shallow cross (‘+’) cut on the top of each cherry tomato where the stem was attached. This simple step will make peeling the skin much easier after blanching, simplifying the cooking process.

Wash the lemon thoroughly, then slice it thinly and cut each slice into four wedges. These will add a wonderful citrus aroma and flavor to the marinade.

Bring a pot of water to a rolling boil. Carefully add the cross-cut cherry tomatoes and blanch them for about 30 seconds. Be mindful of the timing; over-blanching can make them too soft.

Immediately transfer the blanched cherry tomatoes to a bowl of cold water to stop the cooking process and cool them down. Once cooled, gently peel the skin starting from the cross-cut. Drain the peeled tomatoes well.

In a separate bowl, combine the plum syrup (200ml), water (150ml), olive oil (50ml), and fresh lemon juice (4 Tbsp). Whisk everything together until well blended to create the delicious marinade sauce.

Arrange the peeled cherry tomatoes, lemon wedges, and fresh basil leaves in a serving dish or container. Layering them nicely not only looks appealing but also helps distribute the flavors.
