Feeling a lack of appetite in the summer heat? Revive your senses with this cool, tangy, and slightly sweet Kimchi Mari Guksu! This recipe is simple yet delivers a burst of satisfying flavors, perfect for a light and delicious meal.
Main Ingredients- 1 serving of somyeon noodles (about 100g)
- 1 packet of pre-made cold noodle soup broth (approx. 300-400ml)
- 1 handful of well-fermented kimchi, finely chopped (about 1/4 head)
Cooking Instructions
Step 1
Let’s start by preparing the seasoned kimchi. In a bowl, combine the finely chopped kimchi with 1/3 tablespoon of sugar and 1 tablespoon of toasted sesame oil. If your kimchi is already quite ripe and flavorful, you might want to reduce or omit the sugar. Gently mix everything together to ensure the seasoning is evenly distributed. This step is key to deepening the flavor and adding a wonderful umami to your Kimchi Mari Guksu!
Step 2
Now, it’s time to cook the somyeon noodles. Pour 3 cups (about 600ml) of water into a pot and bring it to a rolling boil over high heat. Once the water is boiling vigorously, add the somyeon noodles and gently loosen them with chopsticks to prevent clumping. Somyeon typically cooks in about 3-4 minutes. Refer to the package instructions, but tasting a strand midway is the best way to check for doneness.
Step 3
After cooking, rinse the somyeon noodles thoroughly under cold running water. Rub the noodles gently with your hands as you rinse them; this helps to remove excess starch, making the noodles springy and the broth clear. Drain the noodles completely in a colander and then arrange them nicely in a serving bowl.
Step 4
Pour the chilled cold noodle soup broth over the noodles in the bowl. The colder the broth, the more refreshing the dish will be, so it’s best to keep it refrigerated beforehand. Finally, generously top the noodles with the seasoned kimchi mixture you prepared. For an extra touch, you can add shredded cucumber, a hard-boiled egg, or a sprinkle of sesame seeds. If you prefer it extra cold, add a few ice cubes to your bowl. Enjoy your delicious homemade Kimchi Mari Guksu!
