Main Ingredients
  • 6 bowls of cooked rice (warm rice or refrigerated, thawed frozen rice)
  • 6 eggs
  • 1 stalk of green onion
  • 1/4 carrot (optional, for added color)

  • 2 tsp MSG (for enhanced flavor, optional)

Cooking Instructions

Step 1

First, finely chop the green onion into approximately 0.5cm thick pieces. You can use both the white and green parts of the onion.

Finely mince or thinly julienne the carrot. Carrots add a vibrant color to the fried rice, making it more appealing, but they are optional. Adjust according to your preference.

All ingredients have been prepped and are ready for cooking. Your fried rice is now ready to be made.

Step 5

Now, let’s make the green onion oil. Heat a generous amount of cooking oil in a pan, then add the chopped green onions. Stir-fry them slowly over medium-low heat to allow the fragrant aroma of the green onions to infuse the oil. Be careful not to burn them; gently sauté until fragrant.

Step 6

Once the green onion oil is ready, push the green onions to one side of the pan. Pour the beaten eggs into the empty space and scramble them. Cook just until they are lightly set, not overcooked.

Step 7

Add the prepared carrots and stir-fry with the scrambled eggs for about 1-2 more minutes. It’s important to ensure the eggs are cooked until they are fluffy and separated, not clumped together! This is key to achieving non-sticky fried rice.

Step 8

Once the eggs and carrots are nicely scrambled and slightly cooked, add the seasonings (oyster sauce, salt, MSG) to the side of the pan and briefly stir-fry them to release their aroma. Then, mix them with all the ingredients and stir-fry everything together. Stir quickly to prevent the seasonings from burning.

Step 9

Now, add the prepared rice. If using frozen rice, thaw it in the refrigerator beforehand and let any excess moisture evaporate. This will result in fluffier rice grains, making the fried rice taste much better. Warm, freshly cooked rice is also a good option.

Step 10

Gently break up the rice with a spatula to prevent clumping and stir-fry everything quickly to ensure the ingredients and seasonings are evenly distributed. Maintain medium heat and stir-fry until the rice grains start to lightly toast against the pan for an even better flavor. Your fried rice is ready!
