Ingredients- Generous amount of fresh chives (approx. 100g)
- 4 large eggs
- A little olive oil
- A pinch of salt
Cooking Instructions
Step 1
First, wash the fresh chives thoroughly, pat them dry, and chop them into about 2-3 cm lengths. Crack the 4 eggs into a bowl, add a pinch of salt, and whisk them well to break the chalazae (the white, stringy bits). Four eggs are a good amount for making an egg roll.
Step 2
Heat about 1/2 tablespoon of olive oil in a non-stick pan over medium heat. Spread the oil thinly by wiping it with a paper towel. Pour about one-third of the beaten egg mixture into the pan and spread it thinly. Once the egg starts to set slightly, sprinkle the chopped chives evenly over the cooked egg. Gently fold the cooked portion of the egg over the chives. Then, pour a little more egg mixture over the folded part and the exposed pan. Continue this process, pouring more egg and folding, 2-3 times, to create a thick and satisfying chive egg roll.
Step 3
Temperature control is key when making egg rolls. Using medium-low heat will ensure the egg cooks evenly and doesn’t burn, resulting in a tender interior. Folding and rolling in stages, allowing each layer to set slightly before adding more egg, will create a beautiful, layered texture. Once cooked, let it cool for a moment before slicing into bite-sized pieces. It’s incredibly delicious when served warm!
