Chive and Shrimp Pancake
Soft and Savory Chive Shrimp Pancakes with Grated Radish for Extra Tenderness and Rich Flavor
Made with chives and shrimp I had on hand, these pancakes are perfect as a snack or with drinks. The addition of grated radish makes them exceptionally soft and savory, a truly delicious treat.
Ingredients- 25 stalks chives (approx. 100g)
- 10 medium shrimp, peeled and deveined
- 230g daikon radish (about 1/4 of a medium radish)
- 1 Korean green chili pepper (adjust to taste)
- 1 red chili pepper (for color, optional)
- 1 Tbsp tempura flour
- 1 Tbsp pancake mix (buchim garu)
- 3 large eggs
- Pinch of salt
- Cooking oil for frying
Cooking Instructions
Step 1
Wash the chives thoroughly and pat them dry. Cut them into approximately 3cm lengths for easy eating.
Step 2
Peel the daikon radish, wash it, and then grate it finely using a grater. After grating, gently squeeze out some of the excess water using a cheesecloth or sieve. This helps make the pancakes crispier, but don’t squeeze out all the moisture.
Step 3
Finely mince the Korean green chili pepper and the red chili pepper. If you enjoy a spicier taste, you can increase the amount of green chili, or omit it entirely if making for children.
Step 4
In a large bowl, combine the cut chives, the squeezed grated radish, the minced chili peppers, 3 fresh eggs, 1 tablespoon of tempura flour, and 1 tablespoon of pancake mix. Add a pinch of salt to season the batter.
Step 5
Using a spoon or spatula, gently mix all the ingredients together to form a batter. Try not to overmix, as this can make the chives wilt too much. The batter should be thick enough for the ingredients to hold together, not too runny.
Step 6
Heat a generous amount of cooking oil in a non-stick pan over medium-low heat. Spoon portions of the batter into the pan, shaping them into small rounds. Place the prepared shrimp on top of each pancake. To help the shrimp adhere better, lightly spoon a little extra egg mixture over each shrimp. Keeping the heat at medium-low is key to ensure the pancakes cook through without burning.
Step 7
Once the bottom side is golden brown and crispy, carefully flip the pancakes. Cook the other side until it is also golden brown and evenly cooked. Ensure both sides are nicely browned and the shrimp is cooked through.
Step 8
Serve the chive and shrimp pancakes hot. They are best enjoyed fresh off the pan. A simple dipping sauce enhances the flavor. For a delightful kick, mix a drop or two of vinegar into soy sauce before dipping. If serving to children, omit the chili peppers for a mild and delicious snack.
