Ingredients- Potatoes 300-400g (approx. 2-3 medium)
- Sausage 1
- Onion 1/4
- Mayonnaise 3 Tbsp
- Broccoli 1 head
- Yellow bell pepper (1cm x 1cm cubes) 1
- Ketchup a little
- Salt a little
- Pepper a little
Cooking Instructions
Step 1
First, finely mince the onion. Dice the sausage into similarly small pieces (about 5mm). If you prefer a milder onion flavor, soak the minced onion in cold water for a few minutes, then drain thoroughly.
Step 2
Wash the broccoli thoroughly. Use only the florets, discarding the tough stem. (Tip: You can lightly blanch the broccoli florets in boiling water or microwave them for 1-2 minutes until tender. The leaves can be used in other recipes.)
Step 3
Peel the potatoes and cut them into manageable pieces. Boil them in water until very tender. Once easily pierced with a fork, drain and mash them while still hot using a fork or a potato masher.
Step 4
Once the potatoes are mashed smoothly and have a soft consistency, proceed to the next step.
Step 5
Add mayonnaise, salt, and pepper to the mashed potatoes and mix well to season. Incorporate the minced onion and diced sausage prepared earlier, and mix everything together evenly to create the base of your potato salad.
Step 6
Now it’s time to plate the finished potato salad. We’ll shape it into a dome.
Step 7
Pile the potato salad onto a plate in a mound, or use plastic wrap to form a cone shape. This will help create a stable, tree-like structure. Aim for a pointed shape like a Christmas tree.
Step 8
Next, use the broccoli florets to create the ‘foliage’ of the tree. Insert the broccoli florets closely together all around the sides of the potato salad mound to form the tree shape.
Step 9
Once the tree is covered with broccoli to look lush, decorate the top and scattered areas with the small cubes of yellow bell pepper, like stars or ornaments. (Tip: Feel free to cut the bell pepper into star, triangle, or square shapes as desired.)
Step 10
Finally, use ketchup to draw decorative lines resembling fairy lights on the tree. Your festive Christmas Tree Potato Salad is complete and ready to delight! ヽ(o´▽`o)ノ
