I recall fondly making them for someone I admired, only to be told they were too sweet – a bittersweet memory. Meringue Cookie Base Ingredients- 2 large egg whites (fresh and cleanly separated)
- 100g granulated sugar (white sugar recommended)
- 1-2 drops lemon juice (helps stabilize the meringue)
- Food coloring (red, green) a little
- 1 tsp cocoa powder (for snowman cheeks)
- Sprinkles (for decoration) as needed
Cooking Instructions
Step 1
In a clean bowl, whip the egg whites using a hand mixer or whisk until they form abundant and stiff peaks. Stiff peaks will help the meringue hold its shape well.
Step 2
Once the egg whites reach a certain stiffness, gradually add the sugar in three additions, continuing to whip. Adding all the sugar at once can cause the meringue to clump, so be mindful of this.
Step 3
Whip until the sugar is completely dissolved and the meringue is glossy and forms stiff peaks. The meringue should be so firm that if you turn the bowl upside down, it won’t slide out. Ideally, when the meringue is glossy and smooth, its tip should curl slightly when you tilt the bowl.
Step 4
Add 1-2 drops of lemon juice to help stabilize the meringue and add a slight tang, then mix gently to finish the meringue batter.
Step 5
Divide the finished meringue batter into two piping bags. One will be for the snowman shapes, and the other for the tree shapes. If you don’t have piping bags, you can use ziplock bags and cut off a corner.
Step 6
Now for the snowman meringues. Pipe the white meringue batter onto a baking sheet in a snowman shape (two round mounds, one on top of the other). For the eyes and cheeks, take a small amount of the white meringue, mix it with cocoa powder and red food coloring separately, and then use a toothpick to dot them onto the snowman’s face for a cute touch.
Step 7
Let’s make the Christmas trees! Add green food coloring to the remaining meringue batter and mix well. Using a piping bag, pipe the batter onto the baking sheet in a tree shape. Start with a pointed top and gradually widen the base to create a tree form. Sprinkle your chosen sprinkles onto the piped meringues to decorate the trees.
Step 8
Bake the meringue cookies in a preheated oven at 100°C (212°F) for about 1 hour. The baking time and temperature may need to be adjusted based on your oven’s specifications.
