Muffin Batter Ingredients

  • 50g unsalted butter, at room temperature
  • 50g granulated sugar
  • 1 large egg, at room temperature
  • 80g cake flour, sifted
  • 3g ground cinnamon
  • 4g baking powder
  • 2 Tbsp milk
  • 25g chocolate chips

Cooking Instructions

Begin by creaming the softened butter in a bowl until it’s smooth and fluffy. Gradually add the sugar and mix until well combined, forming a light, pale mixture. Next, incorporate the room-temperature egg. Add it in two to three additions, mixing thoroughly after each addition to ensure it’s fully emulsified and doesn’t curdle the butter mixture. Whisk until everything is smooth and homogenous.

In a separate bowl, whisk together the sifted cake flour, ground cinnamon, and baking powder. Gently fold these dry ingredients into the wet butter-egg mixture using a spatula. Mix just until the dry ingredients are mostly incorporated; avoid overmixing, as this can lead to tough muffins. Once about 80% of the dry ingredients are mixed in, pour in the milk and continue to mix gently until just combined and no dry streaks remain.

Finally, fold in the chocolate chips until they are evenly distributed throughout the batter. Divide the batter among prepared muffin cups, filling each about two-thirds full. Bake in a preheated oven at 180°C (350°F) for approximately 20-22 minutes, or until a toothpick inserted into the center comes out clean.
