Ingredients- 1.4kg cream cheese
- 0.8kg butter
- 0.4kg powdered sugar (confectioners’ sugar)
- 500ml heavy cream
- 50g granulated sugar
Cooking Instructions
Step 1
Ensure your butter is at room temperature and softened. This is crucial for achieving a smooth, lump-free frosting. If the butter is too cold, it won’t incorporate well with the other ingredients. Leave it on the counter until it’s pliable and easy to mix.
Step 2
Whip the heavy cream until stiff peaks form. Pour the heavy cream into a bowl and use a mixer or whisk to whip it until it holds firm peaks. Be careful not to over-whip, as it can separate from the butter later.
Step 3
In a mixing bowl, combine all ingredients except the butter: cream cheese, powdered sugar, granulated sugar, and the whipped heavy cream. Start mixing on a low speed to prevent ingredients from scattering, then gradually increase the speed until you achieve a smooth, uniform mixture.
Step 4
Once the initial ingredients are well combined, add the softened butter. Mix by ‘cutting’ it into the cream mixture. Avoid overmixing at this stage, as it can cause the frosting to melt or become greasy. Mix just until the butter pieces are no longer visible and they’ve emulsified with the cream. Using a spatula to scrape the sides and bottom of the bowl will help ensure even incorporation.
Step 5
Your delicious and smooth buttercream frosting is ready! Transfer the finished frosting into a tray or container. Cover the surface directly with plastic wrap to prevent a skin from forming, and refrigerate. Before using, allow it to sit at room temperature for a short while to soften, making it easier to spread.
