Inspired by a TV show, I had to try making this delicious Hamburg Steak myself! This recipe captures the tender texture and rich flavor, perfect for a special meal.

Hamburg Steak Patty Ingredients

  • 600g ground beef (approx. 1.3 lbs)
  • 300g ground pork (approx. 0.65 lbs)
  • 1/2 medium onion
  • 1 tablespoon butter (approx. 10g)
  • 2 tablespoons cooking oil
  • 2 large eggs (room temperature)
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 2 cups breadcrumbs (approx. 100g)
  • 8 large eggs (for serving, adjust to preference)

Hamburg Steak Sauce Ingredients

  • 1 packet Hayashi Rice roux powder (approx. 100g)
  • 1/2 medium onion
  • A handful of oyster mushrooms
  • 10 tablespoons ketchup
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 800ml water

Cooking Instructions

Step 1

First, finely mince half of the onion that will go into the hamburg steak. Using a mandoline slicer or a food processor will make this easier.

Melt 2 tablespoons of cooking oil and 1 tablespoon of butter in a pan over medium-low heat. Add the minced onion and sauté until it turns a rich brown color, developing its flavor. Thoroughly browning the onions is key to the depth of flavor. Let the cooked onion cool completely before use.

In a large bowl, combine 600g of fresh ground beef and 300g of ground pork. Add 2 room-temperature eggs, 1 teaspoon of salt, 1 tablespoon of sugar, and 2 cups of breadcrumbs. Begin mixing everything together with your hands to form a cohesive mixture.

Knead the mixture thoroughly until it becomes sticky and well-combined. Kneading against the side of the bowl helps the meat bind together. If the mixture feels too wet to form patties, gradually add more breadcrumbs, about 1/4 cup at a time, until it’s manageable.

Now, add the sautéed and completely cooled onion to the meat mixture. Knead again until all ingredients are evenly incorporated. This step ensures the sweetness and flavor of the onions are distributed throughout the patty.

Prepare the ingredients for the sauce: thinly slice the onion and cut the oyster mushrooms into bite-sized pieces.

In another pan or wok, heat 1 tablespoon of cooking oil. Add the sliced onion and oyster mushrooms and sauté until fragrant and the onions are translucent.

The secret ingredient for this sauce is ‘Hayashi Rice roux powder’. It provides a deep, rich flavor without complex steps.

Pour 800ml of water into the pan with the sautéed onions and mushrooms. Bring the mixture to a boil, then reduce the heat to medium-low.

Add 1 packet of Hayashi Rice roux powder and stir until dissolved. Then, add 10 tablespoons of ketchup, 2 tablespoons of sugar, and 1 teaspoon of salt. Taste and adjust seasoning if needed, adding a little more salt if necessary. If the sauce is too thick, gradually add more water to reach your desired consistency.
