Main Ingredients- 10 Tbsp Macaroni (approx. 100g)
- 1/2 Cucumber
- 1/4 Carrot
Dressing- 10 Tbsp Mayonnaise
- 2 Tbsp Sugar
- 1 Tbsp Honey Mustard
- 10 Tbsp Mayonnaise
- 2 Tbsp Sugar
- 1 Tbsp Honey Mustard
Cooking Instructions
Step 1
In a large pot, bring plenty of water to a boil – about 5 times the volume of the macaroni. Add the macaroni and cook for approximately 12 minutes, or slightly longer than the package instructions, until tender and easily pierced with a fork. Drain the cooked macaroni thoroughly in a colander.
Step 2
While the macaroni is cooking, prepare the vegetables. Wash the cucumber and carrot, remove seeds and peel if desired, then finely dice them into pieces similar in size to the macaroni, or to your preference. Finely dicing the vegetables ensures they blend well with the macaroni. Place the prepared vegetables in a bowl.
Step 3
Add the drained macaroni and the diced cucumber and carrot to the bowl. Now, let’s make the dressing! Combine 10 tablespoons of mayonnaise, 2 tablespoons of sugar for sweetness, and 1 tablespoon of honey mustard for a subtle tang. Gently mix everything together with a spatula or spoon until well combined and there are no clumps. Ensure the mayonnaise coats the macaroni and vegetables evenly.
Step 4
Transfer the well-mixed macaroni salad to a serving dish. For an extra touch, you can garnish with a sprinkle of parsley flakes or black pepper. Enjoy immediately, or chill in the refrigerator for a refreshing treat.
