Main Ingredients

  • 1 1/2 cups ground pork (approx. 200g)
  • 1/2 onion
  • 1/3 carrot
  • 1/2 green bell pepper
  • 2 cloves garlic

Cooking Instructions

Step 1

First, prepare all the ingredients that will determine the flavor of your dry curry. You’ll need 1.5 cups of ground pork, half an onion, one-third of a carrot, half a green bell pepper, and 2 cloves of garlic. For the seasoning, have 1.5 tablespoons of cooking sake, a pinch of salt, a pinch of black pepper, half a cup of curry powder, and 2 tablespoons of ketchup ready.

Step 1

Step 2

This is the vegetable preparation step. Finely mince the carrot, onion, green bell pepper, and garlic. Mincing the vegetables into uniform sizes ensures they cook evenly and contribute to a better texture.

Step 2

Step 3

Now, let’s marinate the pork. Pour 1.5 tablespoons of cooking sake over the ground pork and mix gently. Cooking sake helps to remove any gamey odor from the pork and acts as a tenderizer, making it more tender. Let it sit for about 5 minutes to drain the blood.

Step 3

Step 4

Now, we begin stir-frying. Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the ground pork, which has had the blood drained, to the pan. Sprinkle with salt and pepper for seasoning, and stir well to break up any clumps as it cooks. Fry until the pork turns a light brown color.

Step 4

Step 5

Once the pork is partially cooked, add the minced garlic, onion, and carrot to the pan. Increase the heat to high and stir-fry for about 4 minutes. It’s important at this stage to cook for about 4 minutes to maximize the sweetness from the vegetables. Be careful not to burn the vegetables while stir-frying.

Step 5

Step 6

Repeat the same process as the previous step. Once the pork is cooked, add the minced garlic, onion, and carrot, and stir-fry over high heat for 4 minutes. The key is to stir-fry quickly to keep the vegetables crisp yet bring out their sweetness fully.

Step 6

Step 7

Now it’s time to add the flavors. Reduce the heat to medium. Add the green bell pepper, 1/2 cup of curry powder, 2 tablespoons of ketchup, and 1/2 cup of water. Stir everything together until well combined and cook. Continue to cook until the liquid evaporates and the ingredients become thick and cohesive.

Step 7

Step 8

This is the final stage. Over medium heat, add the green bell pepper, curry powder, ketchup, and 1/2 cup of water, stirring to combine. Cook until all the moisture has evaporated and the ingredients are crumbly and dry. It’s important to stir occasionally to prevent sticking.

Step 8

Step 9

Voila! Your dry curry is perfectly cooked, moist-free, and looks wonderfully clean. Serving this generously over rice is absolutely delicious.
