  • Well-fermented kimchi 1.5 cups (chopped)
  • Water 4 cups (total: 2 cups + 1 cup + 1 cup)
  • Cooking wine (Mirin) 1 Tbsp
  • Plum extract 1 Tbsp
  • Sugar 1 Tbsp
  • Minced garlic 1 Tbsp
  • Anchovy sauce (or soy sauce for soup) 1 Tbsp

Cooking Instructions

Prepare all ingredients by measuring them out. Measure the kimchi along with its juice, and chop it into bite-sized pieces.

In a pot, add the thinly sliced pork belly (250g), cooking wine (1 Tbsp), and 2 cups of water. Bring to a boil over high heat. This step helps to remove any porky smell and renders some of the fat, making the broth cleaner. Cook until the pork becomes tender.

Once the pork is cooked, add 1 cup of water, chopped kimchi (1.5 cups), plum extract (1 Tbsp), and sugar (1 Tbsp). Stir well to combine the ingredients.
