Here’s my go-to recipe for a refreshingly light and savory beef radish soup, just like how I make it at home. Enjoy this comforting and wholesome meal!
Main Ingredients- Beef brisket or soup meat 155g
- Radish 155g
- Scallions, chopped 2 Tbsp
- Minced garlic 1 Tbsp
Cooking Instructions
Step 1
First, slice the radish into roughly 3-4mm thick, slightly chunky pieces, similar to bite-sized squares. Finely chop the scallions and have the minced garlic ready.
Step 2
Gently press the beef with paper towels to remove any excess blood. Properly draining the blood is crucial to prevent any gamey odor and ensure a clean-tasting soup.
Step 3
Now, heat 1 Tbsp of sesame oil in a pot and add the prepared beef.

Sprinkle 2 pinches of salt over the beef and place the pot over medium heat on the stove.

While stirring with a spatula over medium heat, stir-fry the beef until it changes color and is cooked through. This step helps to develop the beef’s flavor, making the soup richer.

Once the beef has changed color, add all the sliced radish and stir-fry for about 1 minute. Lightly coating the radish with oil helps the soup become clearer.

Pour in 1 liter of water and turn the heat to high. Add 1 Tbsp of soup soy sauce at this stage.

Next, add 1.5 Tbsp of fish sauce and stir everything well. Using fish sauce adds a savory depth that makes the broth wonderfully rich.

After seasoning, add 1 beef broth cube. Using broth cubes simplifies the process while still providing a deep, savory flavor to the soup.

As the soup comes to a boil, use a spoon to skim off any foam or scum that rises to the surface. Removing this foam is key to keeping the soup clear and pristine.

After skimming the foam, slightly crack the lid open and reduce the heat to medium-low. Let it simmer gently for about 30 minutes. Be sure to leave the lid slightly ajar to prevent the soup from boiling over, which can happen if the lid is fully closed.

After 30 minutes, check the liquid level. If it seems too low relative to the solids, add a little more water and continue to simmer briefly.

Taste the soup and if it feels bland, add a tiny pinch more salt to adjust it to your preference. Since soup soy sauce and fish sauce are already in, it’s best to taste and adjust gradually.

Now, add the chopped scallions and minced garlic, and stir gently.
