  • Ingredient Category : Grains
  • Occasion : Quick & Easy
  • Cooking : Boil / Simmer
  • Servings : 2 servings
  • Difficulty : Beginner

Main Ingredients

  • 3 Potatoes (approx. 400g)
  • 1/2 Onion
  • 1 Green Onion (Scallion)
  • 1.2L Water
  • 3 Anchovy Broth Cubes

Seasoning

  • 1 Tbsp Soy Sauce for Soup (Guk-ganjang)
  • 1 Tbsp Tuna Extract
  • 0.5 Tbsp Minced Garlic
  • Salt to taste

Cooking Instructions

Step 1

First, prepare the vegetables. Slice the green onion diagonally. Peel the potatoes and onion, then cut them into bite-sized pieces, roughly the size you’d pick up with a spoon. Cutting them this way helps them maintain their shape while cooking.

Step 1

Step 2

In a pot, add 1.2L of water and the 3 anchovy broth cubes. Bring the water to a rolling boil over high heat with the lid off. Using anchovy broth cubes allows you to achieve a deep, savory flavor without making a separate broth.

Step 2

Step 3

Once the water is boiling, reduce the heat to medium. Add the prepared potatoes and onion to the pot and simmer for about 5 minutes, allowing them to soften slightly. Be careful not to overcook at this stage, as the potatoes can become mushy.

Step 3

Step 4

Now that the potatoes and onion are partially cooked, it’s time to season. Add 1 Tbsp of soy sauce for soup, 1 Tbsp of tuna extract, and 0.5 Tbsp of minced garlic. Taste the broth and adjust the seasoning with salt as needed. Tip: Adding more soy sauce for soup can make the broth darker, so using salt for the final seasoning helps maintain a clear broth color. Adjust to your preference.

Step 4

Step 5

After seasoning, add the sliced green onion and simmer for another 1-2 minutes to finish the soup. Avoid boiling the green onions for too long, as they can lose their crisp texture; add them near the end. Enjoy your delicious potato soup with a warm bowl of rice!
