We’ll show you how to make a simple yet deeply flavorful bean sprout soup, enhanced with a savory anchovy-kelp broth, crisp bean sprouts, and a refreshing taste. It’s a hearty soup that pairs perfectly with kimchi and a bowl of rice.
Main Ingredients- 1 bag fresh bean sprouts (approx. 300g)
- 1 anchovy-kelp broth pack
- 1400ml cold water (about 7 cups)
- 1 stalk green onion
- 1/2 Tbsp salted shrimp (adds a refreshing taste to the broth)
- 2 Tbsp soup soy sauce (adds umami)
- 1/2 Tbsp minced garlic (enhances aroma)
Optional Ingredients (for color and a hint of spice)- 1 red chili pepper (seeds removed and thinly sliced)

Cooking Instructions
Step 1
First, prepare 1 stalk of green onion to make the broth refreshing. Wash it thoroughly, including the white and green parts, then slice it thinly on an angle (about 0.5cm thick) and set aside.
Step 2
Rinse the bean sprouts gently under cold running water, swirling them around. It’s important to wash them thoroughly to prevent any unpleasant bean sprout odor.
Step 3
Drain the washed bean sprouts completely in a colander. Leaving excess water can make the soup cloudy.
Step 4
In a deep pot, pour in 1400ml of cold water and add 1 anchovy-kelp broth pack. Bring to a boil over high heat. Once the water is boiling vigorously, immediately remove the kelp pack. Prolonged boiling of kelp can result in a bitter taste.
Step 5
After removing the kelp, continue to boil for about 5 more minutes to fully extract the anchovy broth. Remove the anchovy-kelp pack, then add all the prepared bean sprouts. Once the soup with the bean sprouts comes to a rolling boil again, add 1/2 Tbsp salted shrimp, 2 Tbsp soup soy sauce, and 1/2 Tbsp minced garlic. Let it simmer for about 5 more minutes to allow the refreshing flavor of the bean sprouts and seasonings to meld together.
Step 6
While the bean sprouts are cooking, skim off any scum or foam that rises to the surface of the broth with a spoon. Removing the foam will result in a clear and clean-tasting soup.
Step 7
Finally, taste the soup and adjust the seasoning by adding more soup soy sauce or salt to your preference if it’s too bland. Lastly, add the prepared sliced green onions and red chili pepper (optional) and simmer for just another moment until it boils lightly. Your delicious bean sprout soup is complete! It’s delicious even without the red chili pepper. If you like a bit of heat, you can add a small amount of green chili pepper. Enjoy it while it’s piping hot!
