Main Ingredients

  • 350g Fresh Bean Sprouts
  • 7 cups Water (approx. 1.4L)
  • 2 packs Store-bought Broth Base (anchovy & kelp)
  • 10cm piece of White Part of Leek
  • 2/3 Tbsp Minced Garlic
  • 1 Red Chili Pepper
  • 1 tsp Soy Sauce for Soup or Salt (for seasoning)

Cooking Instructions

Step 1

First, rinse the bean sprouts thoroughly under running water. Removing any dirt or debris from the bean sprouts will help create a cleaner soup flavor. If you’re using pre-washed bean sprouts, it will save you even more time.

Step 1

Step 2

Wash the red chili pepper, remove the stem, and slice it thinly on an angle (about 0.5cm thick). Slicing it this way will add a beautiful color to the soup and a subtle touch of spiciness.

Step 2

Step 3

Prepare the leek, focusing on the white part. Slice it thinly into rounds, about 0.5cm thick. The fragrant aroma of the leek will enrich the soup’s flavor.

Step 3

Step 4

Now, pour 7 cups of clean water into a pot and bring it to a boil over high heat. Instead of the hassle of making broth from scratch with anchovies and kelp, using 2 packs of store-bought anchovy and kelp broth base will quickly create a deep and savory broth. Two packs are about right for 7 cups of water.

Step 4

Step 5

Once the water with the store-bought broth packs is boiling vigorously,

Step 5

Step 6

Add all the cleaned bean sprouts to the pot.

Step 6

Step 7

Add the sliced leek as well. The refreshing taste of the leek will harmonize well with the bean sprouts.

Step 7

Step 8

Add about 2/3 tablespoon of minced garlic. The pungent flavor of garlic helps neutralize any fishy smell from the bean sprouts. After adding all ingredients, continue to boil with the lid off for about 5 minutes. During this time, the bean sprouts will soften and the soup will start to become clearer.

Step 8

Step 9

As it boils vigorously for about 5 minutes, some white foam might appear on the surface. Use a ladle to gently skim off this foam. This step is crucial for a cleaner and clearer soup, and it helps remove any lingering unpleasant smells.

Step 9

Step 10

Now, add the red chili pepper slices for a visually appealing touch. The red chili adds a subtle color to the soup and a hint of mild spice.

Step 10

Step 11

Before seasoning, close the lid and let it simmer on medium-low heat for another 2-3 minutes. Simmering with the lid on allows the nutrients and flavors of the bean sprouts to infuse more deeply into the soup, while also helping to maintain their crisp texture.

Step 11

Step 12

Finally, season the soup with soy sauce for soup or salt according to your preference. It’s best to start with 1 teaspoon and add more if needed after tasting. Turn off the heat immediately after seasoning.

Step 12

Step 13

And there you have it – a perfectly cooked bean sprout soup, clear and refreshing without any fishy taste! Enjoy it as a satisfying meal with a warm bowl of rice.
