The first crucial step is to properly purge the clams of any sand or grit. Place the clams in a bowl, add 1 Tbsp of coarse salt and enough water to cover them. Cover the bowl with a dark plastic bag or lid and leave it in a dark place for at least 1 hour. This ‘purging’ process encourages the clams to release any impurities. Doing this ensures your soup will be clean and free of grit.
