- 4 Shrimp
- 40g Napa Cabbage
- 160g Radish
- 1100cc Water
- 40g Onion
- 1 Green Onion (Scallion)
Seasoning- 1 Tbsp Minced Garlic
- 2 Tbsp Rice Wine (or Mirin)
- Pinch of Salt
- Pinch of Black Pepper
- 1 Tbsp Minced Garlic
- 2 Tbsp Rice Wine (or Mirin)
- Pinch of Salt
- Pinch of Black Pepper
Cooking Instructions
Step 1
Start by preparing the vegetables. Slice the radish into large, thin pieces for a refreshing broth. Roughly chop the napa cabbage into bite-sized pieces; it will shrink considerably when cooked, so don’t cut it too thin. Slice the onion into strips and cut the green onion diagonally. The diagonal cut adds a nice visual appeal and helps it cook evenly.
Step 2
Thoroughly scrub the crabs with a brush to remove any dirt. Separate the shells, and carefully cut out the gritty sac from inside the crab’s body – this can impart an unpleasant taste. Cut the crab bodies in half. For the shrimp, remove their whiskers and rinse them clean.
Step 3
Now, let’s make the clear broth. Pour 1100cc of water into a pot. Add the radish, napa cabbage, and onion, and bring to a boil. Once the vegetables are halfway cooked, add the green onions and let it simmer. We’re adding the green onions early to ensure they become nicely tender, which is great for kids.
Step 4
Carefully add the prepared crabs and shrimp to the pot. Don’t discard the crab shells – they are full of flavor and will make the broth incredibly delicious! Adding them enhances the depth of the stew.
Step 5
Add 1 tablespoon of minced garlic for aromatic depth and 2 tablespoons of rice wine (or mirin) to help remove any fishy odors and add a subtle sweetness. These seasonings will blend beautifully into the clear broth, elevating the overall taste of the crab stew.
Step 6
Continue to simmer until the crabs are fully cooked and their meat is plump and tender. Skim off any foam that rises to the surface during cooking; this ensures a clean and clear broth. Finally, season with a pinch of salt and black pepper to your preference. Your delicious, mild clear crab stew is now ready to be enjoyed by the whole family. It’s best served hot!
