Super Simple & Refreshing Dried Mussel Soup Recipe
A warm bowl of soup is a must-have on our dining table! I decided to make a quick and easy dried mussel soup using some dried mussels from my freezer. This soup has a clear, deep, and invigorating flavor that’s perfect for warming up on a chilly day and also makes a fantastic hangover cure. Even beginners can effortlessly make this delicious soup!
Main Ingredients- 70g dried mussels (rinsed thoroughly under running water)
- 2 Korean green chili peppers (add more for extra spice)
- 1/4 Korean radish (for a refreshing soup base)
- 1/2 stalk green onion (thinly sliced)
- 2 Tbsp soy sauce for soup (or fish sauce)
- 1/2 Tbsp minced garlic (adjust to taste)
- 4 cups water (approx. 800ml)
Cooking Instructions
Step 1
First, prepare the dried mussels. Soak them in cold water for about 10 minutes to rehydrate, then rinse them thoroughly under running water to remove any grit. This step is crucial for bringing out the mussels’ natural refreshing flavor.
Step 2
Slice the Korean radish into bite-sized pieces, about 2cm x 2cm. Finely chop the Korean green chili peppers. Slice the green onion diagonally. If you like it spicier, you can leave the seeds in the chili peppers or add more.
Step 3
In a pot, pour in 4 cups of water. Add the dried anchovies and kelp, and simmer for about 10 minutes to create a delicious broth. Remove the anchovies and kelp, then add the sliced radish and rehydrated mussels. Bring to a boil over high heat. Cook until the radish becomes translucent and the mussels plump up.
Step 4
Once the soup is boiling, reduce the heat to medium. Season with soy sauce for soup (or fish sauce). You can add a pinch of salt if needed. Finally, add the minced garlic and sliced green onion, and simmer for another minute. Your refreshing and flavorful dried mussel soup is ready!
