Ingredients

  • 1 Semi-dried squid
  • 1/5 Korean radish (approx. 200g)
  • 1/3 Scallion (green onion)
  • 1/2 handful Soybean sprouts (approx. 50g)
  • 1/2 Tbsp Minced garlic
  • 2.5 Tbsp Soup soy sauce (or anchovy sauce)
  • 1 Tbsp Gochugaru (Korean chili powder)
  • 600ml Water (approx. 3 cups)

Cooking Instructions

Clean the semi-dried squid by carefully removing the internal cartilage (center bone) and the beak. Rinse it thoroughly under running water. Slice the squid into bite-sized pieces (about 1.5cm wide) to achieve a pleasant chewy texture.

Pour 600ml of water into a pot. Add the peeled and thinly sliced Korean radish (na-bak style). Bring to a boil over high heat and cook until the radish edges start to turn translucent.

Once the edges of the radish appear slightly cooked and translucent, add the prepared semi-dried squid to the pot. Let it simmer to allow the squid’s savory flavor to infuse into the broth.

After adding the squid, season the soup with 1/2 Tbsp minced garlic for a clean taste, 2.5 Tbsp soup soy sauce (or anchovy sauce for a deeper umami flavor), and 1 Tbsp gochugaru for a touch of mild spiciness. Taste and adjust seasoning with salt or more soup soy sauce if needed.
