  • 1 Korean chili pepper (Cheongyang)
  • 1 Tbsp Cheongju (rice wine)

Mussels are known for their hangover-curing properties! My husband and I used to enjoy them a lot on our dates to traditional Korean pubs. They’re fantastic as a snack with drinks or as a restorative soup. Let’s prepare these wonderful mussels.

Look for the beard-like threads protruding from between the mussel shells. Gently pull them off or snip them with scissors. Then, wash the mussels thoroughly under running water, scrubbing them like you’re washing clothes. Rubbing the shells against each other will help remove any grit.

In a large pot, place the cleaned mussels. Add enough water to come about halfway up the mussels. Bring to a rolling boil over high heat. Fresh mussels have a very mild smell, but adding 1 tablespoon of Cheongju (rice wine) while boiling helps eliminate any fishy odors, resulting in a clean and pure mussel soup. If you enjoy a bit of spiciness, finely chop the Korean chili pepper and add it to the pot as well.
