Essential Ingredients
- 800ml Anchovy Broth (richly brewed)
- 120g Soybean Sprouts (fresh)
- 150g Tofu (of your preference)
- 70g Baby Napa Cabbage (chopped into bite-sized pieces)
- 1 handful Green Onions (chopped)
Cooking Instructions
Step 1
First, prepare 800ml of richly brewed anchovy broth for a deep and robust flavor. Adding dried anchovies and kelp together while brewing will enhance the taste even further.
Step 2
Pour the prepared anchovy broth into a pot and bring it to a boil over high heat. Once the broth begins to boil, add 1 Tbsp of Korean soup soy sauce to season the broth.
Step 3
Rinse the 120g of soybean sprouts thoroughly under running water to remove any debris and drain them. Trimming the root ends can also help to eliminate any potential beany smell.
Step 4
When the broth is boiling, add the cleaned 120g of soybean sprouts and 150g of tofu cut into bite-sized pieces.
Step 5
Chop the 70g of baby Napa cabbage into bite-sized pieces and add it to the pot with the soybean sprouts and tofu. The cabbage will contribute to a more refreshing broth.
Step 6
Now it’s time to season the soup. Add 1 Tbsp of fish sauce, 0.5 Tbsp of minced garlic, and 1/3 Tbsp of coarse sea salt. Cover the pot and let it simmer over medium heat until the soybean sprouts and cabbage are fully cooked. Taste the broth midway and adjust the seasoning with salt or more soup soy sauce if needed.
Step 7
Once the soybean sprouts and cabbage are tender, add a generous handful of chopped green onions to finish. This will infuse the broth with their fragrant aroma.
Step 8
Finally, sprinkle a pinch of black pepper to further enhance the soup’s flavor. You can also add a little red pepper powder if you prefer a touch of spice.
Step 9
Your clear, refreshing, and stomach-soothing soybean sprout soup is now complete! Enjoy it warm with a bowl of rice for a satisfying meal.
