Main Ingredients- 1 Squid, cleaned and prepared
- 200g Radish (about 1/4 of a medium radish)
- 1/2 stalk Green Onion
Broth Ingredients- 7 Dried Anchovies (for broth)
- 800ml Water
Seasoning- 1 tsp Minced Garlic
- 1 tbsp Soup Soy Sauce (Guk-ganjang) (adjust to taste)
- 7 Dried Anchovies (for broth)
- 800ml Water
Seasoning- 1 tsp Minced Garlic
- 1 tbsp Soup Soy Sauce (Guk-ganjang) (adjust to taste)
Cooking Instructions
Step 1
Let’s start by making a clear and refreshing anchovy broth. Pour 800ml of water into a pot and add the dried anchovies. Bring it to a boil over high heat, then reduce to low heat and simmer for about 10 minutes to extract a rich broth. For a cleaner flavor, you can remove the anchovies’ guts and fins before boiling. 🙂
Step 2
While the broth is simmering, let’s prepare the ingredients for our soup. First, slice the radish into bite-sized pieces. Thin slices will cook faster and become wonderfully soft, making them perfect for babies and children!
Step 3
Squid can become tough if overcooked, which might make it difficult for little ones to chew. Slice the squid into small, manageable pieces according to your child’s age and chewing ability! The size should be appropriate for easy eating.
Step 4
Once the anchovy broth is ready, remove the anchovies. Add the sliced radish to the pot and let it simmer until the radish becomes translucent and tender, about 5 to 10 minutes. Cooking the radish thoroughly will bring out a fresh and clean flavor in the soup.
Step 5
When the radish is sufficiently cooked, it’s time to add the squid. Be careful not to overcook the squid, as it will become tough. Add the squid towards the end of the cooking process and cook just until it’s done to maintain its tender and slightly chewy texture. This is the key step for tender squid.
Step 6
Finally, add the chopped green onions, minced garlic, and soup soy sauce to season the soup. Use soup soy sauce for the primary seasoning, and you can add a pinch of salt if needed to adjust the flavor. Simmer for another moment to let all the flavors meld together, and your delicious Squid and Radish Soup is ready! 🙂
