Main Ingredients- 1 fresh squid
- 1/6 of a daikon radish
- 0.5 Tbsp minced garlic
- 2 Tbsp soup soy sauce (Guk-ganjang)
- 2 Tbsp anchovy sauce (Myeolchi-aekjeot)
- 1.5 Tbsp perilla oil
- 1 anchovy and kelp broth pack (or 500ml store-bought broth)
Cooking Instructions
Step 1
First, prepare the ingredients needed to make the Clear Squid and Radish Soup. Clean the squid and cut it into bite-sized pieces. Thinly slice the daikon radish; this will help the flavors to infuse into the broth better. Heat a pot over medium-low heat, add 1.5 Tbsp of perilla oil, and stir-fry the sliced radish and squid until lightly browned. Be careful not to burn them. This step is crucial for removing any fishy smell from the squid and infusing its flavor into the radish as it releases its moisture.
Step 2
In another pot or a deep bowl, add 700ml of cold water (or enough for 1 anchovy and kelp broth pack) and place the broth pack inside. Let it steep for 10 minutes to create an anchovy and kelp broth. Using this broth will significantly deepen the umami flavor of the soup. You can also use store-bought broth or boil anchovies and kelp yourself.
Step 3
Once the squid and radish have been sufficiently stir-fried and their aromas have developed, pour the steeped anchovy and kelp broth into the pot. This forms the base for your delicious soup. Bring it to a boil over high heat, then reduce to medium heat and simmer until the radish becomes translucent and tender.
Step 4
When the radish is cooked, it’s time to season. Add 2 Tbsp of soup soy sauce and 2 Tbsp of anchovy sauce for a deep, savory flavor. Also, add 0.5 Tbsp of minced garlic to enhance the aroma and reduce any remaining fishiness. After adding all the seasonings, continue to simmer over medium heat for about 10 minutes, allowing the flavors to meld into the broth. Taste and adjust seasoning with more soup soy sauce or salt if needed.
Step 5
Finally, add diagonally sliced green onions or scallions to the soup. This will give the Clear Squid and Radish Soup a more refreshing and vibrant taste.
