Clear and Refreshing Squid Soup
A Clean and Cool Squid Soup Perfect for a Sore Throat
This soup is incredibly refreshing and clean, making it the perfect remedy when your throat feels irritated or rough. Enjoy a clear broth that soothes and revitalizes.
Main Ingredients- 1 squid
- 1 piece of radish (about 3cm thick)
- A bit of zucchini
- 1/3 small onion
- 4 cups clam broth
- 1 green onion
Seasoning- 1/2 Tbsp minced garlic
- 1 tsp soy sauce for soup (guk-ganjang)
- 1/2 Tbsp minced garlic

Cooking Instructions
Step 1
Prepare the squid by removing the skin, guts, and backbone, then slice it into approximately 1cm thick pieces. Slice the radish thinly (about 2-3mm thick), shred the onion, cut the zucchini into bite-sized pieces (like half-moons), and slice the green onion diagonally.
Step 2
In a pot, add the sliced radish, 1/2 Tbsp minced garlic, and 1 tsp soy sauce for soup. Sauté these ingredients over medium-low heat without adding any oil (like sesame oil). Cook using only the moisture released from the radish until it becomes tender. Adding soy sauce at this stage helps to deepen the flavor and allows the radish to absorb the seasoning better, resulting in a more savory broth.
Step 3
Once the radish turns translucent and is sautéed until soft, pour in 4 cups of pre-made clam broth and add the shredded onion. Bring the mixture to a boil over high heat. If you don’t have clam broth, you can substitute it with anchovy and kelp broth.
Step 4
When the broth comes to a rolling boil, add the zucchini and the prepared squid. Continue to simmer for a short while longer. Be careful not to overcook the squid, as it can become tough. Simmer for about 2-3 minutes after adding the squid.
Step 5
Finally, add the diagonally sliced green onions. Skim off any foam that rises to the surface to keep the broth clear. Taste and adjust seasoning with coarse sea salt if needed. (In this recipe, the clam broth was very flavorful on its own, so no additional seasoning was required.)
