Clear and Refreshing Sundubu Jjigae (Soft Tofu Stew)
A Simple Recipe for a Light and Flavorful White Soft Tofu Stew
While spicy red sundubu jjigae with chili oil is delicious and comforting, sometimes a clear, mild version is what you need to soothe your stomach. This recipe for a light and clean-tasting soft tofu stew, filled with tender tofu and fresh seafood, is perfect for a gentle meal. Enjoy a comforting bowl that’s easy to make at home.
Main Ingredients- 1 block soft tofu (sundubu)
- 30g frozen clam meat
- 3 frozen shrimp
- 1 broth sachet (e.g., anchovy and kelp)
- 35g mushrooms (shiitake, oyster, etc.)
- 1 egg
- 1 Tbsp minced garlic
- 10cm section green onion
- 1 Tbsp cooking wine (e.g., mirin)
Seasoning- 1 Tbsp anchovy fish sauce
- 1/2 Tbsp salted shrimp (saeujeot)
- 1 Tbsp anchovy fish sauce
- 1/2 Tbsp salted shrimp (saeujeot)
Cooking Instructions
Step 1
First, wash and thinly slice the green onion diagonally. Place the frozen clam meat and shrimp in a bowl, add 1 Tbsp of cooking wine, and soak in cold water to thaw. This thawing process helps remove any fishy odor and makes them more tender.
Step 2
Lightly beat the egg in a separate bowl. This makes it easier to add to the stew later.
Step 3
In a pot, add 400ml of water and the broth sachet. Bring to a boil and simmer for about 8 minutes to create a rich broth. Remove and discard the broth sachet for a clean, clear base.
Step 4
Add 1 Tbsp of anchovy fish sauce to the clear broth to enhance the umami flavor. You can substitute with soy sauce or salt if preferred.
Step 5
Rinse the thawed clam meat and shrimp under cold running water. Add them to the boiling broth and cook until they are done.
Step 6
Carefully cut open the top of the soft tofu package with scissors or a knife. Gently squeeze the tofu into the simmering broth. Be careful not to break it up too much.
Step 7
Once the tofu is added, stir in 1 Tbsp of minced garlic and the prepared mushrooms. The mushrooms will add depth and flavor to the stew.
Step 8
Taste the stew and adjust the seasoning. If it tastes a bit bland, add 1/2 Tbsp of salted shrimp for extra depth and saltiness. Salted shrimp adds a wonderful savory complexity.
Step 9
Just before turning off the heat, slowly drizzle the beaten egg over the stew. Let it cook gently until the egg is softly set. Garnish with sliced green onions if desired. Enjoy your comforting and delicious clear sundubu jjigae!
