How to Make Delicious and Clear Beef and Seaweed Soup
A nutritious seaweed soup rich in calcium! It’s a common dish for a simple breakfast because it’s not overly seasoned. I especially love seaweed soup when it’s cooked clear, so today we’ll learn how to make a wonderfully clear beef and seaweed soup.
Ingredients- 2 cups dried, cut seaweed (after soaking)
- 300g beef for soup (e.g., brisket)
- 1 Tbsp tuna extract (fish sauce)
- 1 Tbsp soup soy sauce (guk-ganjang)
- 1/2 Tbsp minced garlic (optional, for enhanced flavor)
- Salt to taste
- 8 cups water (approx. 1.6L)
Cooking Instructions
Step 1
First, pour 8 cups (approx. 1.6L) of water into a pot for 4 servings. Add the whole piece of beef brisket for soup. Boiling the unsliced beef in cold water helps to extract a richer broth. Start heating over medium heat.
Step 2
Next, prepare about 2 cups of dried, cut seaweed. This measurement is after soaking. Soak the seaweed in cold water for about 30 minutes, then rinse thoroughly and squeeze out excess water. Cut it into bite-sized pieces using scissors or a knife.
Step 3
As the water in the pot begins to boil, impurities and fat from the beef will rise to the surface. Skim off this foam using a ladle or similar utensil. Removing the foam will result in a clear and clean broth. Once the beef is partially cooked, remove it and let it cool slightly.
Step 4
Once the beef has cooled down a bit, shred it along the grain or slice it into bite-sized pieces with a knife. This step helps to maintain the tender texture of the beef.
Step 5
Add 1 tablespoon of tuna extract to the clear broth from boiling the beef to enhance its savory flavor. Tuna extract will deepen the soup’s overall taste profile.

Next, add 1 tablespoon of soup soy sauce. The combination of tuna extract and soup soy sauce creates the deep flavor of the beef and seaweed soup. (Optional: adding 1/2 tablespoon of minced garlic at this stage will further enhance the aroma and taste.)
Step 7
Now, return the soaked seaweed and the prepared beef to the pot. Cover with a lid and simmer over medium-low heat for about 15-20 minutes, allowing the flavors to meld into the seaweed and beef. Taste and adjust the seasoning with salt if needed.
