Introducing an easy-to-make fish cake soup recipe using the soup base included in a comprehensive fish cake set. By adding homemade anchovy-kelp broth, you can achieve a deeper and more refreshing soup flavor. While using just the included soup base is simple, simmering it with radish allows the umami of the fish cakes to meld, creating a richer taste. Unfortunately, I couldn’t find any konjac at the nearby mart, but next time, I plan to add konjac or rice cakes for an even more abundant meal! Enjoy this chewy fish cake soup with its refreshing broth, perfect for warming up on a chilly day.
Ingredients- Goraesa Assorted Fish Cakes 800g (various types)
- Radish 1/5 piece (approx. 100g)
- 1 Tbsp minced garlic (15ml)
- 2 Tbsp chopped green onions (30ml)
- 1 tsp black pepper (5ml)
- 1 Tbsp soy sauce for seasoning (15ml, for taste adjustment)
- 1L Natural Seasoning Dried Anchovy Broth (or anchovy-kelp broth)
Cooking Instructions
Step 1
First, arrange thinly sliced radish at the bottom of the pot. If you have any tteokbokki rice cakes, adding them on top of the radish will add a chewy and delicious texture. If you’ve prepared konjac, add it at this stage as well.
Step 2
Prepare various types of assorted fish cakes and cut them into bite-sized pieces. Slice long fish cakes diagonally and square ones as they are for a pleasing appearance and easy cooking. Arrange the cut fish cakes evenly in the pot.
Step 3
Add the liquid soup base included in the assorted fish cake set. This base adds a fundamental savory flavor to the soup. If the broth tastes bland or you want to adjust the seasoning considering the moisture from the radish, add 1 Tbsp of seasoning soy sauce. Finally, add 1 tsp of black pepper to enhance the soup’s aroma.
Step 4
Pour 1L of the prepared natural anchovy broth into the pot. Add 1 Tbsp of minced garlic and 2 Tbsp of chopped green onions. Bring to a boil over high heat, then reduce to medium-low heat and simmer gently. This slow simmering allows the broth to become milky white and extracts the deep flavor of the fish cakes, resulting in a richer soup. The longer it simmers, the deeper the fish cake soup will taste.
Step 5
Your rich, milky fish cake soup, similar to bone broth, is ready! You can enjoy it as is, or for a more special taste, serve with a side of yellow mustard to add a zesty kick. Enjoy your meal with this warm and comforting soup!
