Clear Rockfish Stew (Ureok Jiritang) Recipe

Ingredients- 3 medium Rockfish (Ureok), cleaned
- 5 stalks of fresh Korean Parsley (Minari)
- 1/4 Daikon radish
- 2 sheets of dried Kelp (Dashima)
- 1 Tbsp minced Garlic
- 1 Red chili pepper
- 1 Green chili pepper
- 1/2 handful of dried Seaweed (Miyeok), rehydrated
- 2 Tbsp Coarse sea salt
- 2 Tbsp Anchovy fish sauce (Myeolchi aekjeot)
- 2 L Water
- 2 handfuls of Bean Sprouts (Kongnamul)
- 10 sprigs of Korean Parsley (Minari) for garnish
Cooking Instructions
Step 1
Prepare the vegetables for the stew. -Slice the large green onion: cut into large chunks for the broth and thinly slice diagonally for garnish. -Wash the bean sprouts thoroughly and rinse the Korean parsley. -Rehydrate the dried seaweed in water until soft.
Step 2
Start building the broth. In a large pot, combine 2L of water, the daikon radish, rehydrated seaweed, kelp, large chunks of green onion, and the cleaned rockfish. Add 1 Tbsp of minced garlic and bring to a boil over high heat.
Step 3
Once the stew comes to a rolling boil, season it with 2 Tbsp of coarse sea salt and 2 Tbsp of anchovy fish sauce. Using coarse sea salt in clear broths adds a subtle sweetness and makes the soup even more refreshing.
Step 4
After seasoning, cover the pot and reduce the heat to medium-low. Let it simmer for about 10-15 minutes. This allows the flavors of the rockfish and vegetables to meld into a deep and refreshing broth.
Step 5
When the broth has sufficiently developed its flavor, it’s time for the final touches. Add the washed bean sprouts and cook for a minute until slightly tender. Then, add the Korean parsley (5 stalks), red chili pepper, and green chili pepper. Since Korean parsley is aromatic, add it near the end and cook for just 1-2 minutes to preserve its fresh fragrance. Turn off the heat.

Your delicious clear rockfish stew (Ureok Jiritang) is ready! Enjoy the milky-white, refreshing broth and the tender rockfish.
