We’ve made the trendy ‘cloud bread’ that’s been popular lately, easily using an air fryer. It’s a visually stunning treat that’s surprisingly simple to whip up at home.

Ingredients

  • 2 egg whites
  • 22g granulated sugar (approx. 2 Tbsp)
  • 8g cornstarch (approx. 1 Tbsp)

First, prepare all the necessary ingredients for the recipe. You’ll only need the egg whites, so separate them carefully. To help them whip up better, let them sit at room temperature for a bit to remove the chill.

Place the room-temperature egg whites into a clean bowl. Start whipping them with a hand mixer or whisk. Initially, you’ll see a lot of frothy bubbles forming.

Once the egg white foam starts to look like soft beer foam, it’s time to add the sugar. Although the recipe calls for a small amount of sugar, to create a firm and stable meringue, add about one-third of the sugar at this stage and mix it in. (Typically, you’d add sugar in 2-3 additions for a sturdier meringue, but with this small quantity, adding it all at once is fine.)

Continue whipping the meringue after adding the sugar. Keep whipping until the meringue holds its shape when you tilt the bowl and the whisk marks no longer disappear immediately, indicating it’s becoming stiff.

Once the meringue has reached a somewhat stiff consistency, sift the pre-measured cornstarch over it. Gently fold it in to incorporate without deflating the meringue.

After adding the cornstarch, give it one final whip. Your meringue is ready when it looks glossy and forms stiff peaks that stand straight up! (It’s ready when you can turn the bowl upside down without the meringue falling out.)

Line your baking pan or dish with parchment paper. Carefully transfer the finished meringue onto the parchment paper, shaping it into a stable mound.

Use a scraper or spatula to smooth out the top surface. A lumpy top can look a bit messy after baking, so aim for a smooth, rounded hill shape for a prettier result.

Place the prepared cloud bread mixture into an air fryer preheated to 140°C (285°F) and bake for about 20 minutes. Keep an eye on it during baking to prevent burning.
