Cloud-like Fluffy Soufflé Omelette

Couldn’t go out to enjoy the flowers, so I whipped up my feelings into this fluffy soufflé omelette! Experience a texture as soft and airy as a cloud.
Ingredients
- 3 Eggs
- 2 Tbsp Sugar
- Heavy Cream or Whipping Cream (Optional)
- 1 Tbsp Butter
Cooking Instructions
Step 1
First, carefully separate the egg whites from the yolks. Ensure no yolk or water gets into the whites, as this will prevent them from whipping properly.
Step 2
In the bowl with the yolks, add 1-2 tablespoons of heavy cream or whipping cream (if using) and whisk until well combined and smooth. If you’re not using cream, simply whisk the yolks until smooth.
Step 3
Now, it’s time to whip the egg whites. Using a whisk or an electric mixer, beat the egg whites in one direction until stiff peaks form. This means when you lift the whisk, the egg whites should stand up straight without drooping. Gradually add the sugar, one tablespoon at a time, while whipping to help create a stable meringue. (If you added cream to the yolks, adjust the sugar and use a total of only 2 tablespoons for the whites.)
Step 4
Gently fold the yolk mixture into the stiffly whipped egg whites. Use a spatula and fold carefully to avoid deflating the airy meringue. Treat it like a delicate cloud!
Step 5
Place a small, high-sided non-stick pan over low heat. Add 1 tablespoon of butter and let it melt. Carefully pour the batter into the center of the pan. Cover with a lid and let it cook for about 4 minutes. Using a smaller pan with higher sides will help the omelette puff up beautifully.
Step 6
After 4 minutes, carefully fold the omelette in half using a spatula. Gently roll and cook it for a little longer on the pan to ensure the inside is cooked through while keeping the outside tender. The goal is a golden exterior and a moist, fluffy interior.
