Main Ingredients
  • 2 medium semi-dried cod fillets
  • 1 bunch fresh spinach (approx. 200g)
  • 1 red chili pepper
  • 2 Tbsp chopped green onion (scallion)
  • 3-4 slices fresh ginger
  • 4 bay leaves

Seasoning and Broth Ingredients
  • 2-3 Tbsp miso paste
  • 1 Tbsp minced garlic
  • A pinch of black pepper
  • 2 Tbsp cooking sake or ginger wine

Cooking Instructions

Step 1

Thaw the semi-dried cod fillets if frozen by leaving them at room temperature. Once thawed, rinse them thoroughly under cold running water. Trim off any fins or tail edges if necessary.

Step 2

Pour 1 liter of water into a pot and bring it to a rolling boil over high heat. Once boiling, carefully add the prepared cod fillets to the pot.

Step 3

Add the sliced ginger, bay leaves, and 2 Tbsp of cooking sake or ginger wine to the pot. Bring it back to a boil, then reduce the heat to medium. Simmer for 15-20 minutes. Cooking it gently will help create a milky, rich broth, similar to a bone broth.

Step 4

Carefully remove the cod from the broth and let it cool slightly. Once cool enough to handle, use chopsticks or a fork to separate the flesh from the bones. Flake the fish meat into bite-sized pieces. While this step might seem a bit tedious, it makes the soup much easier and safer for children or elderly individuals to enjoy.

Step 5

Strain the broth by removing and discarding the ginger slices and bay leaves. This ensures a clean and clear flavor for the soup.

Step 6

Add the spinach to the milky cod broth. If using frozen spinach, add it directly from the freezer without thawing. If using fresh spinach, wash it, lightly pat it dry, and then add it to the pot to cook.

Step 7

Return the flaked cod meat to the pot. Stir in 2-3 tablespoons of miso paste. You can adjust the amount of miso to your preference. Bring the soup back to a boil.

Step 8

Finally, add the sliced red chili pepper, minced garlic, chopped green onion, and a pinch of black pepper. Simmer for a short while longer until everything is well combined. Taste the soup and add salt if needed to reach your desired seasoning. Be careful not to overcook the spinach, as it can lose its fresh flavor.
