Basic Ingredients

  • 85g softened unsalted butter, room temperature
  • 50g granulated sugar
  • 1g salt
  • 20g water
  • 1 fresh egg yolk

Cooking Instructions

Step 1

In a bowl, cream the softened butter using a whisk or spatula until it has a smooth, creamy consistency. Ensure the butter is neither too cold nor melted. Whipping it sufficiently until smooth is key for the perfect cookie texture.

Step 2

Add the granulated sugar and salt to the creamed butter. Mix them together until the sugar crystals dissolve and the mixture becomes a glossy, ivory color. This step deepens the cookie’s sweetness and flavor profile.

Step 3

In a separate small bowl, mix the 20g of water with the 5g of coffee powder to create a coffee liquid. Gradually add this coffee liquid to the butter mixture, stirring quickly to prevent separation. Finally, add the egg yolk and mix again until just combined. The yolk will make the dough slightly more moist.

Step 4

Sift the 120g of cake flour and 5g of cocoa powder together into the bowl with the wet ingredients. Using a spatula, gently ‘cut’ the dry ingredients into the wet until no dry streaks remain. Be careful not to overmix, as this can lead to tough cookies. Once the flour is incorporated, gently bring the dough together.

Step 5

Divide the dough into small portions, about 7g each, and shape them into small balls, resembling coffee beans. Place these dough balls onto a baking sheet lined with parchment paper, ensuring there’s some space between them as they will spread slightly during baking.

Step 6

Bake in a preheated oven at 180°C (350°F) for approximately 20 minutes. Baking time and temperature may vary depending on your oven. The cookies are ready when the edges turn a light golden brown. Keep an eye on them to prevent burning!
