Main Ingredients

  • 1/2 chicken (about 2-3 lbs), cut into pieces
  • 1 onion, cut into large wedges
  • 2 potatoes, peeled and cut into large chunks
  • 1 red chili pepper, sliced (for color and mild heat)

Cola Braised Chicken Sauce

  • 1 cup (240ml) cola
  • 3 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 1 Tbsp sugar
  • 2 Tbsp soju or rice wine (for removing gamey odor)

Cooking Instructions

Step 1

First, to remove any gamey odor from the chicken, blanch it in boiling water for about 2-3 minutes. This step ensures a cleaner flavor and tender texture.

In a pot, combine 1 cup (240ml) of water with the blanched chicken pieces and all the Cola Braised Chicken Sauce ingredients (cola, soy sauce, oyster sauce, sugar, and soju). This is the sauce mixture for half a chicken.

Add the potatoes and red chili pepper slices to the pot. If you have carrots or sweet potatoes, feel free to add them as well – they complement the dish wonderfully. Cover the pot with a lid and simmer over medium heat for about 20-30 minutes, or until the potatoes are tender and the chicken is cooked through.

After 20-30 minutes, if the sauce hasn’t reduced to your desired consistency, add the onion wedges. Continue to cook for another 10 minutes with the lid off, allowing the sauce to thicken slightly and the onions to soften and sweeten.
