Here’s a special weekend lunch recipe for Salad Inari Sushi, made by transforming leftover apples and cucumbers from the fridge into a fresh salad with imitation crab sticks. The harmony of the sweet and sour dressing, crisp vegetables, and chewy tofu pouches is sure to awaken your appetite. It’s also perfect as a children’s snack or a simple picnic item.
Main Ingredients- 6 sticks imitation crab (kani kamaboko)
- 1/2 cucumber
- A small amount of apple (about 1/4 of a small apple)
- 14 pre-seasoned fried tofu pouches (inari aburaage) for sushi
- 1.5 cups cooked rice (approx. 300g)
- A small amount of bean sprouts (for garnish)
Cooking Instructions
Step 1
First, prepare the ingredients for the salad. Wash the 1/2 cucumber, remove the seeds, and thinly slice it into strips. Core the 1/4 apple and also slice it thinly. Unwrap the 6 imitation crab sticks and shred them finely along the grain. Slicing or shredding the ingredients thinly will help them blend together beautifully in the salad.
Step 2
In a large bowl, combine the thinly sliced cucumber and apple, and all the shredded imitation crab. Add the salad dressing ingredients: 3 Tbsp mayonnaise, 2 Tbsp honey mustard sauce, 0.5 Tbsp English mustard, 0.5 Tbsp lemon juice, and a pinch of black pepper. Gently mix everything together with a spatula or spoon until well combined. Be careful not to overmix, as this can make the ingredients mushy. Your fresh and savory salad is now ready!

Now it’s time to season the rice. In another bowl, place 1.5 cups of warm cooked rice. Add 1 Tbsp sesame oil, 2 Tbsp chopped pickled radish, and 1 packet of seasoned rice mix. Don’t overfill, as it will make it difficult to add the salad. Spoon a generous amount of the prepared salad on top of the rice in each pouch.
