Colorful and Nutritious Stir-fried Shiitake Mushrooms with Vegetables
Shiitake Mushroom and Vegetable Stir-fry using Leftover Vegetables
A delicious side dish made with leftover vegetables from your refrigerator. Perfect for a quick and healthy addition to your meals.
Main Ingredients- 3 fresh shiitake mushrooms
- 1/2 bell pepper (any color you like)
- 1/4 onion
- 1 Korean green chili pepper (optional, for a hint of spice)
- 2 cloves garlic
- A little cooking oil
Seasoning- Pinch of salt
- Pinch of black pepper
- 2 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
First, wash the fresh shiitake mushrooms thoroughly under running water. Pat them dry, remove the tough stems, and slice them thinly. This helps them cook evenly and release their wonderful flavor.
Step 2
Thinly slice the garlic cloves into slivers to release their aroma. Cut the Korean green chili pepper in half lengthwise, remove the seeds, and julienne it. For the bell pepper, I had some leftover pieces from before, so I simply cut them into bite-sized pieces regardless of shape. Slice the onion similarly. (Tip: Try to cut all your vegetables into similar thicknesses so they cook at the same rate for a perfectly balanced stir-fry.)
Step 3
Heat a little cooking oil in a pan over medium-low heat. Add the sliced garlic and sauté until fragrant, being careful not to burn it. Then, add the sliced onion and stir-fry until it becomes translucent and slightly softened, which will bring out its natural sweetness.
Step 4
Now, add the shiitake mushrooms to the pan. Sprinkle in a pinch of salt to season them and stir-fry until the mushrooms soften and release their earthy aroma. The salt will help draw out moisture and enhance their flavor.
Step 5
Finally, add the julienned Korean green chili pepper and bell pepper to the pan. Stir-fry quickly, just until the vegetables are tender-crisp and slightly wilted. Avoid overcooking to maintain their vibrant colors and fresh crunch.
Step 6
I chose not to add sesame oil to keep the flavors clean and pure. Instead, for a rich nutty flavor, generously sprinkle in toasted sesame seeds, crushing them slightly between your palms before adding. Finish with a light dusting of black pepper.
