  • 4 fresh eggs
  • 2 bell peppers (e.g., red, yellow)
  • 1 segment of scallions or green onions, finely chopped
  • 1 teaspoon salt

First, crack 4 eggs into a clean bowl. Gently whisk them to break up the yolks and blend thoroughly. Add 1 teaspoon of salt and stir until well combined. Finally, add the finely chopped scallions and give it a light mix to prepare your egg mixture.

Wash the bell peppers thoroughly and pat them dry. Using a knife, carefully cut off the top section, leaving about 2 cm intact to serve as a lid later. Remove all the seeds and the white pith from the inside of the bell pepper. Then, gently pour the prepared egg mixture into each bell pepper, filling them about 80-90% full to prevent overflow when cooked.

If the bottom of the bell pepper is rounded or uneven, making it difficult to stand upright, place each filled pepper into a sturdy cup or small bowl to secure it. Once the bell peppers are filled and standing upright, place them in the microwave and cook for approximately 5 minutes. The eggs will puff up as they cook, so keep an eye on them and adjust the cooking time as needed based on your microwave’s power. Be cautious when removing the hot steamed bell peppers.
