A Vibrant Bell Pepper Stir-Fry Rice Bowl Packed with Vitamins
Introducing the bell pepper stir-fry rice bowl that graced our dinner table yesterday. While bell peppers are often used as a supporting ingredient in many dishes, in this recipe, we’re making them the star of the show for a delicious rice bowl. Bell peppers are rich in Vitamin C, making them a wonderful ingredient to include in your diet regularly. Not only are bell peppers and paprika packed with Vitamin C, but their beautiful colors also enhance the visual appeal of any dish. Let’s create this healthy and attractive rice bowl together!
Main Ingredients- Pork (ground or thinly sliced for stir-fry)
- 1 Onion
- Bell Peppers (red, yellow, orange, etc., 2 in total)
Pork Marinade- Pinch of salt
- Pinch of black pepper
- 1 Tbsp Mirin (or cooking wine)
- Pinch of ginger juice or powder (optional)
Stir-Fry Seasoning- 1 Tbsp Minced garlic
- 1 Tbsp Oyster sauce
- Pinch of salt (for adjusting taste)
- Pinch of black pepper
- 1/2 Tbsp Sesame oil
- 1 Tbsp Mirin (or cooking wine)
- 1/4 cup Slurry (2 Tbsp water + 1 Tbsp cornstarch)
- Pinch of salt
- Pinch of black pepper

- 1/4 cup Slurry (2 Tbsp water + 1 Tbsp cornstarch)
Cooking Instructions
Step 1
First, marinate the pork by mixing it with a pinch of salt, pepper, mirin, and ginger juice (or powder). This step helps to reduce any gamey odor from the pork, making it more delicious. Slice the onion thickly into strips or chunks, and similarly, remove the seeds from the bell peppers and slice them into pieces similar in size or shape to the onion. Using a variety of colorful bell peppers will make your rice bowl look much more appealing.
Step 2
Heat a frying pan over medium-high heat, add a little olive oil, and sauté the minced garlic until fragrant. Once the garlic is lightly golden, add the marinated pork. Break up any clumps and stir-fry until the pork is browned.
Step 3
Once the pork is mostly cooked, add the sliced onion and bell peppers. Stir-fry them together. Be careful not to overcook the vegetables; it’s best to stir-fry them quickly over medium-high heat so they don’t become mushy. Overcooked vegetables can release a lot of water and detract from the taste and appearance of the dish. Just cook until they are slightly softened.
Step 4
When the vegetables are lightly cooked, add 1 tablespoon of oyster sauce, and season with salt and pepper to taste. Stir in the sesame oil and mirin for extra flavor. Finally, to thicken the sauce, gradually add the cornstarch slurry (made by mixing 2 tablespoons of water with 1 tablespoon of cornstarch) while stirring constantly until the sauce reaches your desired consistency. Once thickened, turn off the heat. Your stir-fry is ready!
Step 5
Serve a bowl of warm rice and generously top it with the delicious bell pepper stir-fry you just made. To add a touch of color, I also added some cherry tomatoes on the side. Enjoy this simple yet nutritious and satisfying rice bowl!
