Make a Festive Bulgogi Rice Cake for Christmas & Year-End Family Parties
This Christmas, why not prepare a unique cake that the whole family can enjoy? While creamy cakes are delicious, this visually appealing Bulgogi Rice Cake is a fantastic alternative for children who are increasingly reluctant to eat rice. It’s a wonderful way to incorporate various vegetables, savory bulgogi, and fragrant mushrooms into their diet, making mealtime fun. It also serves as an excellent breakfast substitute or a nutritious snack. Let’s opt for wholesome rice-based treats over processed flour-based snacks!
Rice Cake Ingredients- 5 bowls of cooked rice
- 5 sheets of pickled radish (for kimbap)
- 1 green bell pepper
- 1 carrot
- 3 boiled egg yolks
- 170g pork tenderloin
- A little bit of king oyster mushroom (cap part)
- 1 pack of sprouts
- A little bit of radish sprouts
- 1/4 onion
- 4 cloves of garlic
- A pinch of salt
Pork Bulgogi Seasoning- 1 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 1 tsp sesame oil
- 1 Tbsp grated onion + garlic
- 1 Tbsp cooking wine (mirin)
- A pinch of herb salt
Shrimp Seasoning- 8 shrimp
- 1 Tbsp cooking wine (mirin)
- 1 tsp grated onion + garlic

Cooking Instructions
Step 1
First, prepare the vegetables that will give color to the rice cake. Finely mince the carrot, pickled radish, and green bell pepper. Finely chopped vegetables will ensure the layers of the rice cake look beautiful and have a pleasant texture.
Step 2
Peel and clean the shrimp. Marinate them with 1 Tbsp cooking wine, 1 tsp grated onion and garlic, herb salt, and a pinch of salt. Sauté the minced carrots and green bell peppers in a pan with 1 tsp of oil and a pinch of salt. Adding a little oil when stir-frying carrots helps with the absorption of carotene, making them healthier.
Step 3
Slice the king oyster mushrooms into bite-sized pieces. Grill the pork tenderloin and shrimp until nicely browned. Season the mushrooms with a pinch of salt and herb salt. For the rice, mix in 1 Tbsp sesame oil, 1 Tbsp perilla oil, a pinch of sesame seeds, and a pinch of salt to season it, similar to how you would prepare rice for kimbap.
Step 4
Now it’s time to shape the rice cake using a cake mold. A cake mold with a diameter of about 18cm works well, but you can also use a round bowl if you don’t have one. Grease the inside of the mold thoroughly with oil to prevent the cake from sticking and ensure easy removal. First, spread a thin layer of the seasoned rice at the bottom of the mold. (About the amount used for one roll of kimbap is sufficient.) Evenly spread the green minced bell pepper on top, followed by another thin layer of rice. Next, add the yellow minced pickled radish, then another layer of rice. Finally, top with the orange sautéed carrots, and finish with a final layer of rice. This completes the basic structure of the rice cake.
Step 5
It’s time to unmold the rice cake. Place a plate on top of the finished rice cake and carefully invert the mold, then lift it off slowly. You’ll reveal a beautifully layered rice cake with vibrant colors.
Step 6
Let’s decorate the top of the rice cake. Mash the boiled egg yolks through a sieve and sprinkle them evenly over the top of the cake. Initially, I sprinkled the yolk powder directly, but it got messy on the sides, so I re-inserted the mold to help contain it. A helpful tip is to prepare the yolk powder in a separate bowl beforehand and then gently sprinkle it over the cake to keep the sides clean.
Step 7
Finally, add the finishing touches. Cover the edges of the rice cake with sprouts to hide any exposed parts, giving it a more polished, cake-like appearance. Arrange the pre-cooked pork bulgogi, chewy king oyster mushrooms, and plump shrimp attractively on top. Your colorful and delicious Bulgogi Rice Cake is ready!
