First, let’s make cute mini carrots! Prepare small carrots and blanched broccoli. Slice the carrots into about 0.5cm thick pieces. Then, use the back of your knife to round off the sharp edges, creating a natural, carved look. Think of it as gently sculpting them.

The blanched broccoli will be used as the ‘leaves’ for our mini carrots. Cut the broccoli stems into appropriate lengths. Trim them to match the size of the mini carrots for an even cuter appearance.

Now, it’s time to make a hole in the carved carrots. Using a toothpick makes this process easy and neat.

Gently poke the top of the carrot with a toothpick to mark the spot. You don’t need to go too deep – just enough to insert the broccoli stem later.

Carefully widen the poked hole slightly using the toothpick. Once you have a hole, simply insert the prepared broccoli stem, and voilà – your super easy mini carrots are complete! How simple is that?

Now, let’s make the quail egg bunnies! Most of you probably know how, but here’s a quick guide. Boil and peel the quail eggs. Make small cuts for the ears and attach black sesame seeds for the eyes to create cute bunnies. Place the mini carrots next to them.

Next up, fluffy egg rolls! Whisk the eggs and cook them into thin omelets. Once slightly cooled, roll them up tightly and slice them into heart shapes. Use a toothpick to hold the shape if needed. For a fun twist, add a bit of curry powder to the water when boiling quail eggs – this creates a delicious yellow quail egg! These can be placed next to the bunnies and carrots for a pop of color. Now, let’s prepare the kimbap fillings. You’ll need thinly sliced ham, egg omelet strips, julienned carrots, square fish cakes, crab sticks, cucumber, and seasoned burdock root (though not pictured, it’s essential for kimbap!). Since store-bought burdock can be quite salty, I pressed it with paper towels to absorb some of the seasoning. This way, I didn’t need to add much seasoning to the other ingredients, achieving a balanced flavor overall. My kids don’t eat pickled radish, so I relied on the seasoning of the ham and burdock. Cut the kimbap ham and fish cakes into quarter strips. Briefly blanch the fish cakes in boiling water to remove any impurities. Soak the crab sticks in cold water, then drain and cut them into quarter strips as well.

Lightly season the warm rice with sesame oil and salt. Cut the kimbap seaweed sheets into quarters. Roll them tightly just like you would for regular kimbap, and your delicious kids’ kimbap is ready! Rolling them firmly into bite-sized portions will make them even easier for little ones to enjoy.
