Cut the tofu into thick slices and lightly season with coarse salt. Heat a non-stick pan (no oil needed) and pan-fry the tofu until golden brown on both sides. Slice the Spam into bite-sized pieces and pan-fry it alongside the tofu, also without oil. Once the tofu and Spam are nicely browned, push them to one side of the pan. Pour the beaten egg into the empty space and quickly scramble it until cooked. This method allows for a less oily and more wholesome flavor.

Gently squeeze out the excess water from the salted cucumber slices. Finely chop your kimchi. Any type of kimchi will work beautifully – if you have napa cabbage kimchi, chop that up. Otherwise, use your favorite store-bought or homemade kimchi like baechu kimchi, chonggak kimchi, or kkakdugi.
