  • Carrot, 1/4 medium
  • Enoki mushrooms, 1/2 bag
  • Korean green chili peppers, 1-2 (adjust to taste)
  • Scallion (green part), 1/3 stalk

  • Garlic, 5 cloves

First, prepare 300g of smoked duck. Then, gather various vegetables from your refrigerator and get ready to prepare them fresh.

Wash all the vegetables thoroughly. Slice the onion and carrot thinly into strips or diagonally. Trim the base of the enoki mushrooms and separate them into strands. Finely chop the Korean green chili peppers (removing seeds if desired) for a touch of heat, and thinly slice the scallion diagonally for added aroma. From the 5 cloves of garlic, thinly slice 2 cloves for fragrance and finely mince the remaining 3 cloves.

Heat a large pan or wok over high heat. Add the smoked duck and the sliced garlic. Stir-fry until the duck is lightly browned and has released its delicious oils, about 2-3 minutes.

Once the duck has rendered some fat, push the cooked duck and garlic slices to one side of the pan. If there’s excessive duck fat, you can carefully drain some off or blot it with a paper towel.
