Main Ingredients

  • 4 slices of bread
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1/2 green bell pepper
  • 1 can of salmon (drained)
  • 3 eggs

Seasoning & Sauces

  • Pinch of salt
  • Pinch of black pepper
  • 3-4 Tbsp mayonnaise
  • 1-2 Tbsp honey mustard sauce
  • 1-2 Tbsp ketchup
  • A little cooking oil (for greasing the pan)

Cooking Instructions

Step 1

First, prepare the bell peppers by washing them thoroughly. Remove the seeds and dice them into very small, fine pieces. This ensures they blend well with the other ingredients and provide a pleasant texture in the sandwich.

Step 1

Step 2

In a large bowl, crack the 3 eggs. Use a fork or whisk to beat them until the yolks and whites are well combined. Season with a pinch of salt and a pinch of black pepper to enhance the flavor and eliminate any eggy odor.

Step 2

Step 3

Add the finely diced bell peppers to the beaten eggs and mix well. Next, drain the canned salmon completely using a sieve. Gently flake the salmon with a fork and add it to the egg and pepper mixture. Stir everything together until just combined. Be careful not to over-mix.

Step 3

Step 4

Heat a square-shaped non-stick pan (or a regular one) over medium-low heat and lightly grease it with cooking oil. Pour about two-thirds of the egg mixture into the pan, spreading it to form a thin, rectangular omelet. Once the edges begin to set, carefully flip it over and cook until golden brown on both sides. Using a square mold can help achieve a neater shape.

Step 4

Step 5

Toast the 4 slices of bread until golden brown using a toaster, a dry pan, or a grill pan. Spread a thin layer of mayonnaise evenly on one side of each toasted bread slice. Carefully place the rectangular omelet on top of the mayonnaise. Drizzle with honey mustard sauce and ketchup as desired, then top with the remaining slice of toast. Your delicious salmon and bell pepper sandwich is now ready to enjoy!
