Dough Ingredients
  • 600g White Bean Paste (Baek Ang-geum)
  • 40g Almond Flour
  • 1 Egg Yolk
  • 1 Tbsp Milk
  • 1-2 drops Vanilla Extract (Optional)

Cooking Instructions

Step 1

In a large bowl, place the 600g of white bean paste. Add 1 egg yolk, 1 tablespoon of milk, and 1-2 drops of vanilla extract for extra aroma. Use a spatula or your hands to knead the ingredients together until smooth and lump-free. Next, sift in 40g of almond flour for a nutty flavor. Gently mix until the flour is fully incorporated into the bean paste, creating a smooth dough.

Step 2

Divide the completed bean paste dough into approximately three equal portions and place each portion into separate bowls. To each bowl, add the coloring ingredients. Add 1 teaspoon of strawberry powder to one bowl for a delicate pink hue, 1 teaspoon of cocoa powder to another for a rich brown color, and 1 teaspoon of pumpkin powder to the last bowl for a vibrant orange shade. Gently mix each portion until the color is evenly distributed throughout the dough, creating your three-color dough.

Step 3

Now, prepare your piping equipment. Fit your piping bag with your desired decorative tip. Flower or star tips are commonly used to create beautiful cookie shapes. Divide the three-colored dough portions among the piping bags. You can either fill each bag with a single color or combine multiple colors in one bag for a marbled or gradient effect. Gently press out any air from the piping bags as you fill them to ensure a clean extrusion.

Step 4

Line your baking sheet with parchment paper or a silicone baking mat to prevent sticking. Using the filled piping bags, carefully pipe your desired shapes onto the prepared baking sheet. Aim for a moderate thickness, as piping them too thinly may cause them to break after baking. Once piped, gently press chocolate chips or candied peas onto the surface of the cookies for decoration. Bake in a preheated oven at 150-160°C (300-320°F) for about 10-12 minutes, or until the edges are lightly golden. Keep an eye on them during baking to prevent burning.
