  • 1/2 yellow bell pepper

  • A handful of crisp lettuce leaves (4-5 leaves)

  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp fine gochugaru (Korean chili flakes)
  • 1 Tbsp soy sauce
  • 1 Tbsp maesilcheong (plum extract)
  • 1 Tbsp corn syrup or honey (adjust sweetness)
  • 2 Tbsp vinegar (adjust sourness)
  • 1 Tbsp sesame oil
  • 1 tsp minced garlic
  • 1 Tbsp toasted sesame seeds
  • Pinch of salt (to taste)
  • Pinch of black pepper (to taste)

Cooking Instructions

Step 1

First, wash and prepare all your fresh vegetables. Get your dumplings ready to be steamed or fried according to your preference. For the delicious bibim mandu sauce, combine all the sauce ingredients in a small bowl and mix thoroughly until smooth. Feel free to adjust the sauce’s proportions to suit your taste.

Step 1

Step 2

Wash all the vegetables (cabbage, red cabbage, bell peppers, cucumber, lettuce) and thinly slice them into julienne strips. Cook the glass noodles in boiling water until they are tender yet chewy (about 5-7 minutes). Drain the noodles and rinse them under cold water to remove excess starch; this prevents sticking and maintains a nice, springy texture. Prepare the dumplings by either steaming them until soft or pan-frying them in a little oil until golden and crispy. Hard-boil the egg with a pinch of salt in the water, then peel and slice it into wedges.

Step 2

Step 3

Arrange the julienned vegetables attractively on a large plate or serving bowl. Place the cooked glass noodles and dumplings on top of the vegetables. Finally, generously drizzle the prepared sweet and sour sauce all over the dish. For an extra touch, you can garnish with sliced hard-boiled egg and more toasted sesame seeds to make it even more appealing. Mix everything together and enjoy the explosion of flavors in every bite!
