Main Ingredients

  • 1 Egg
  • 300ml Water (approx. 1.5 cups)
  • 1 Red chili pepper
  • 1/2 stalk Green onion
  • 6 Dried anchovies (for broth)
  • 1 Tbsp Mirin (rice wine)

Seasoning (using a tablespoon as measurement)

  • 1/4 Tbsp Salt
  • 1/4 Tbsp Minced garlic
  • Pinch of Black pepper
  • 1/2 Tbsp Soup soy sauce

Cooking Instructions

Step 1

In a deep pot, combine the 6 dried anchovies and 300ml of water to make a broth. (Tip: Adding a piece of dried kelp (dashima) will enhance the umami flavor and make it even more delicious.) Once the water comes to a rolling boil, reduce the heat to medium-low and simmer for another 10 minutes to extract the deep flavors. Then, remove the anchovies and kelp, leaving only the clear broth.

Wash the green onion and red chili pepper thoroughly. Slice the green onion thinly (either straight or diagonally) and slice the red chili pepper diagonally. (Tip: If you like, you can add thinly sliced onion for extra sweetness and flavor.)

Crack 1 egg into a bowl. Sprinkle a pinch of black pepper over it. If you are sensitive to the eggy smell, add 1 tablespoon of mirin (rice wine) to the egg mixture and whisk well; this helps to remove any unpleasant odors.

While the clear broth is simmering over medium heat, slowly pour the beaten egg into the pot, starting from the edges and moving in a circular motion. Pouring gently like this prevents the egg from clumping up and creates delicate strands.

As the egg begins to form soft curds, season the soup. Add 1/2 tablespoon of soup soy sauce, 1/4 tablespoon of salt, and 1/4 tablespoon of minced garlic in order. Stir gently to combine and taste.
