For those who prefer simplicity in cooking, this recipe is no exception. We’ll be making refreshing soba noodles, a beloved summer dish that anyone can prepare easily and conveniently. Get ready for a delicious and breezy meal!
Soba Noodle Ingredients- Soba Noodles (Buckwheat Noodles) 300g (approx. 2 servings)
- Tsuyu (Soba Dipping Sauce) 3 cups
- Grated Daikon Radish 4 Tbsp (tablespoon, using a rice spoon)
- Chopped Green Onions 3 stalks
- Shredded Seaweed (Nori) A pinch
- Fresh Wasabi A pinch
- Ice Cubes Adequate amount
Cooking Instructions
Step 1
First, place a generous amount of water for boiling the soba noodles in a pot and set it on high heat to boil. While the water is coming to a boil, finely chop the green onions for garnish.

Grate about three rice spoons’ worth of daikon radish using a grater. The grated daikon radish will add a cool and refreshing flavor to your soba noodles.

Prepare the shredded seaweed (nori) as well, which adds a savory aroma. You can also use seasoned seaweed flakes if you prefer.

Once the water is boiling vigorously, add the 300g of soba noodles and cook for 6 minutes according to the package instructions. (Tip: Using noodles with a higher buckwheat content will enhance the deep buckwheat flavor. This recipe uses noodles with 35% buckwheat content.)

To ensure the noodles are perfectly al dente, rinse the cooked soba noodles in cold water. Rinse them two to three times under cold running water, then drain thoroughly in a colander. This prevents the noodles from becoming mushy and maintains their chewy texture.

Now, let’s make the refreshing soba dipping sauce! Squeeze some fresh wasabi onto the side of a serving bowl. Mix 3 cups of Tsuyu with water in a 1:1.5 ratio (Tsuyu:Water), and add 4-5 ice cubes to make it extra cold. (Tip: If Tsuyu is unavailable, you can create a similar flavor using soy sauce, sugar, and dashi broth.)
