As the summer heat intensifies, we introduce a simple yet delicious recipe for Yeolmu Mul Naengmyeon, perfect for beating the heat. The refreshing combination of well-fermented yeolmu kimchi and cool broth will instantly invigorate you.
Ingredients- Somen noodles for 2 servings (approx. 200g)
- 1 pack of store-bought naengmyeon broth (approx. 500g)
- 100g well-fermented yeolmu kimchi
- 1 hard-boiled egg
- A small amount of cucumber
- 200g yeolmu kimchi brine
- A small amount of chives
- A small amount of toasted sesame seeds
Cooking Instructions
Step 1
If your yeolmu kimchi has fermented nicely and is ready to provide a refreshing taste, it’s the perfect day to make delicious Yeolmu Mul Naengmyeon. It becomes even easier with store-bought naengmyeon broth.
Step 2
Prepare the somen noodles to be boiled, cucumber and hard-boiled egg for toppings, the star ingredient yeolmu kimchi, the yeolmu kimchi brine to enhance the broth’s flavor, and chives for a fragrant finish.
Step 3
Wash the chives and cucumber thoroughly. Then, julienne them into thin strips. For the cucumber, removing the seedy core before julienning will help reduce excess moisture.
Step 4
Boil the somen noodles in boiling water for about 3-4 minutes. Rinse the cooked noodles multiple times under cold running water to achieve a chewy texture. For an extra chilly serving, soak them in ice water before draining them completely in a colander.

In a large bowl or pot, combine 1 pack of store-bought naengmyeon broth with 200g of the prepared yeolmu kimchi brine. If you prefer a sweeter taste, you can add a little plum extract or sugar to your liking. Mix well and chill the broth. (Since the naengmyeon broth is already seasoned, taste and adjust the sweetness accordingly.)

Place the drained somen noodles into the chilled broth. Arrange the chopped yeolmu kimchi, the halved hard-boiled egg, and the julienned cucumber attractively on top of the noodles.

Carefully pour the chilled broth over the toppings. Pour gently to prevent the noodles from scattering.
